Melting chocolate

i work for ann summers and need to make some novelty chocs as prizes for people, i want them to be tasty and nice quality chocs... i know i can't use cadburys choc as it goes all lumpy and powdery... what's the best choc to melt for things like this? vikfowler (Mon 16:04 13/Mar/06)

a good chocolate to use for melting down is 70% Lindt. You can add double cream and brandy and a little unsalted butter.

I should think so, but remember, truffles are rather soft!!! I can't begin to imagine what sort of molds you're using ;-) but you may want to try it out first or just go for it!!!! remember to add a little alcohol as they're for adult use...... hehe...

maybe you could use a little melted chocolate to line the molds before you put the truffle mixture in. It might make it easier to get them out.

I've melted Cadburys Dairy Milk into molds with great results.

I do think you should stick with good quality chocolate for this, providing it's not coming out of your pocket as it's for work. Good quality chocolate.... they say for us girls that chocolate can be better than sex, but together it's even better!!!!

make sure you melt the choc in a bowl over a saucepan of boiling water, rather than directly over the heat or in the microwave, it'll be much nicer and you can keep the bowl of choc over the hot water while you're pouring it in the mould (sp?) so it doesn't re solidify.

i used the cadburys melting choc and some belgian white choc, they turned out brilliant!!! can't wait to start giving them out to people they are yummy and look hilarious!


i also got some dark belgian choc but i ran out of molds so havent done them yet :)

im at cheffing college, the best chocolate to use is that of nearly pure cocoa, look on the back, it will give you a precentage
