What To Do With A Raw Beetroot?!

I have been given a beetroot that a friend has grown. It is approx 3 inches high and over 4 inches wide.
I'm looking for veggie recipe suggestions - any ideas?

Just shred it into a salad.

I should have said that I have made lots of beetroot meals before but usually with precooked beets, so it is what to do with a raw one that I am after please.

Or, if you have a juicer, juice it with apple.

Wrap it in tin foil, salt, pepper, balsamic...and bake.

You can make cake with beetroot, not that I`ve ever tried it.

Grated beetroot with grated apple makes a lovely side dish for lots of meals.

I'd juice it with carrots, Orange, lemon and fresh ginger. An excellent cleansing juice :-)

Alternatively, roast it and serve with goats cheese.

A beetroot that big is likely to be woody and past its best - make some beetroot soup.

Peel, grate and then heat gently in a pan, remove mix in some sultanas desiccated coconut.and ricotta place in filo pasty and bake according to instructions for a Beetroot Samosa.
