Duck Breasts

Got a couple of duck breasts for tonight.

How would you cook them? Current thinking is with cherry and port sauce but am open to suggestions/recipes.

Cherry & port sauce looks excellent.
Any sauce you like as long as the duck breast is served very pink and sliced thinly.

Delia does a wonder recipe for Duck with Sour Cherries, These are sometimes called Bing Cherries, and are not easy to get......Sainsburys had them last time I looked.

score the skin, season and then sear them skin-side down, hot pan no oil butter, until they are bronzed. Drain off any fat during this phase. Then sear the meat side for 30secs.

and then into an oven at 220c for the following times
Rare - 10 minutes
Medium - 15 minutes
Well Done - 18 minutes

Plus (very important) let the meat rest for 10 minutes under some foil and a t-towel across it.
As for cooking then I would say the same as DTC but I would actually rest them for 20 minutes
agree longer the better......
All gorgeous! I like a simple red-wine sauce with them myself. Wish OH liked them. :(
