anyone advise how to make good batter. i have just bought 1k cod fillets from tesco.

packets of battermix or make your own ?

make your own its simple enough,

eggs, milk flour
eggs, beer, flour
ice water, cornflour

depending on the finish you are going for.
Half a pint of beer to 4oz of flour, one egg and some salt and pepper.
Make your own.

I dont use quantities, I do it by sight.

Plain flour, sifted
One egg separated
Salt and pepper (I also add a pinch of curry powder or some Ras El Hanout)
Icy cold lager (or other fizzy beer)

Stick the flour, seasoning, egg yolk in a bowl. Make a well and pour in lager. You want a thickish batter, probably slightly thicker than double cream. Whisk to incorporate lots of air. Stick in fridge for at least 30 mins.

Beat egg white until stiff. Fold beaten egg white into batter just before you coat your fish.
It doesn't matter on how good your batter is if your oil is not hot enough.

A lot of domestic deep fat fryers simply don't get hoy enough.
Tonic or soda water works well in place of the beer too.
I use soda water, chilli and cumin when I deep fry runner beans.
Sounds yummy melv16. How do you fry runner beans exactly? I take it you add the soda water, chilli and cumin to the batter mix? I hadn't thought of doing this before.
