Use creme fraiche rather than cream as it never splits.

Cream sauces risk splitting but I've frozen them with no problem. All other sauces should be fine.
I'm with Ummmm on this subject. Most sauces containing cream I have made then frozen have survived. All others, no worries.

Thank you very muc. It was the cream sauces I was worried about. Is there any particular way to freeze this to avoid "splitting"?

Will bear hat in mind, thanks Diddly.
Does it do the job as well as ordinary cream?
Quite agree, if you use crème fraiche then there is no problem with cream sauces. I freeze Bolognese sauce in batches. Freeze away!
