Suggestions would be greatly appreciated for low cost desserts that can be easily made, ideally in advance, for 45?

I've got as far as a posset and now have major brain fade!

You can't really get cheaper than bread and butter pudding. You could add some dried papaya, saffron and cardamom to jazz it up a bit.

I would use saffron or cardamom, not both.
I love trifle! so easy to make and not expensive.
Buy them a mince tart each and make up an urn of custard to pour over.

Surely any of the traditional kid party deserts would fit the bill, assuming sufficient fridge room. Jelly, blancmange, custard, etc..
Bombe Mexicaine - essentially a brown sugar coffee meringue which goes toffee like in the middle, filled with coffee cream. You cook in advance and it benefits from being filled and stuffed and then frozen.
3 really good sized Pavs, perhaps with different fruits....

It's for a fork buffet for adults, age unknown.

Individual servings are preferred to save a long queue of people waiting to be served.

Have toyed with pannacotta/meringue but am wondering what to do with the left over yolks/whites. As I won't be about to utilise them.

Bread and butter pudding is definitely on the list.

Could you not make quiche and cheese straws out of the yolks?
take home pressies?
