I am going to cook it in a slow cooker (my first time), and freeze portions for another day.

Any tips, or do or do nots?

I literally just put mine in slow cooker with some rosemary and left it on low - meat was so tender it just fell off the bone .
It wouldn't last two days in this house. Enjoy
slow, slow., slow..... a good slash of marsala or port over it as well....
I cook one shank per person, per meal. Maybe your shank will be much bigger than the ones I buy
^Me too - but I don't like it cooked with wine.

What about stock & veg snowball?
You don't need stock - well I've never added any. And well yes you can put your veg in with it too - I just thought you were cooking the shank only.
In my opinion the veg will be very greasy

Wont it be dry without any stock, It was going to be a lamb-shank casserole
You didn't say it was going to be a casserole. The wrong cut of lamb entirely
I buy those pre-cooked frozen lamb shanks, only 6 minutes in the microwave. I am also very partial to shoulder of lamb. For some reason I'm not too keen on leg of lamb.
Nope not dry without stock - it's basically steaming itself with the heat from the glass lid .
peppered leg of lamb here, a chunk on 33% discount from M&S today, about 700g for £8, Aga roasting now, some rosemary and a splash of olive oil added, red onion and red peppers to be roasted along side, a selection of steamed veg with wh. asparagus, baby courgette, fine french beans and baby turnips....
Yep hc actually think the veg would be greasy - probably why I never add veg

hc, are you saying I shouldn't use lamb-shanks as a casserole, or just cook them on there own, and do veg separate?
the second option would be better.....the veg more bite to them....

I have done it with racks of lamb but I've also made a larger quantity of the jus and slow cooked shanks with it.
I wouldn't use lamb shanks in a casserole.
