Why does it have Tagliatelle in that recipe, when it's Spaghetti Bolognese, Shoota?
Because originally a Bolognese sauce was served with tagliatelle, that recipe is an attempt to get back to originality.

You will note that it does not mention coffee.

I'm experimenting!

I always put chocolate in my Chilli Con Carne. That's nothing new.
because apparently that's the authentic Italian way. When I make it I use macaroni, concigli or fusili as it's so much easier to eat. It's all the same stuff anyway, just different shapes. I never cook the pasta separately, I merely stir it into the sauce while it simmers. Saves washing a pan.

This is the best Bolognese I've ever tasted (as recommended by Ecclescake)

I can`t really see the point in changing a tried and tested recipe. It`s a bit like Heston Blumenthal putting seaweed in Shepherds Pie (not a success)

Right, having done the spoonful of coffee thing, I would say it was ok. It did seem to deepen the sauce but it was a bit like eating in a restaurant where the pervading aroma of coffee fills the air. Mr T enjoyed it and said, 'Very nice.' but he wasn't aware of the coffee ingredient. I ate mine but the coffee aroma was too overpowering, thought.

I won't do that again.
