Ok, all this talk about salmon is making my fancy a nice salmon fillet.

How would you cook yours and what would you have it with?

I would open the tin and spread it on some buttered bread, topped with a few very thin slices of cucumber.

I do like tinned salmon, had it a lot in sandwiches growing up so a bit of a comfort food for me :) Only ever have it with a bit of butter though. Cucumber sounds nice!
I would make some lemon pepper butter which is as it sounds lemon juice, ground black pepper and butter mixed together in quantities to your taste. Poach the salmon with new boiled potatoes carrots and broccoli.
Give it to the local cats.
Cauliflower, yes, broccoli, no, the devil's vomit.
I do mine coating both sides with a dry rub of 50% Brown Sugar and 50% Madras Curry Powder, then onto a hot frying pan. I don't use any oil.
Number 1 - wild salmon, yes more expensive but far more flavour.

Having seasoned the fish, fresh ground black pepper and some sel du mer (sea salt), I would splash some oil into the frying (sauté pan), sear skin side for about 2 mins and turn over - 3 mins.

Then throw in a mix of finely chopped shallots, chillis, and some rosemary or lemon thyme. Whack in a hot oven for five minutes, possibly some blanched baby leeks and/or cherry toms added too.

Lift the fish out and keep warm (alufoil and a tea-towel for 3-5 mins)

Splash the remnants with some white wine and butter, reduc, and if you feel decadent, some double or even better creme fraiche. Remember to taste and season.

Serve up, some lemon quarters, new spuds and maybe french beans.
extra fine asparagus are nice too as an accompaniment.
...and there's me thinking all them boogers ate was pasties!
I top mine with pesto and bake in the oven. Yummy.

Mmmm... some great ideas, thank you all! Unfortunately Tesco salmon fillets is about all my budget will stretch too I imagine, is it significantly more expensive?

I don't think I've ever tried asparagus, should change that!

Are even! On my phone in bed, obviously too tired to notice my poor grammar before hitting submit!
Make a glaze with soy sauce, honey, lemon juice or whatever you fancy - I love pomegranate molasses with it. Pour some over the salmon and wrap it in a tin foil parcel. Put it in a hot oven till the parcel puffs up - about 10 mins or so. Yum yum yum
Eve, if you've never had asparagus, be prepared for a little shock the next morning. when you go for a wee wee. It smells funny.
Love new potatoes and salad with salmon baked in foil and seasoned with butter, lemon juice , black pepper and herbs to hand.

Sounds lovely Daisy! Ok I'm intrigued by pomegranate molasses, never heard of them.
Was wondering what to do with the pomegranate molasses I was given. Thanks Lynda.

Brush with sweet chilli sauce, into foil and into the oven. Peppers, tomatos, courgettes onions etc roasted, served with cous cous.
