Anyone got a light and fluffy recipe for vanilla cupcakes? I've tried a few but not really happy with the result!

I always use the same recipie as for Victoria sponge.
Could I tag another q on - why do mine always rise with a pointed top?
Try adding a teaspoon of hot water to mixture for each egg should give you a looser texture
I weigh my eggs and use the same for the flour, sugar and stork. I also add a teaspoon of baking powder. My MIL's recipe, never fails.

sherrardk - mine never rise!! :-)
A pointed top could mean you have put a bit to much mixture in each cup.
yelenots: Have you tried adding a few tablespoons of carbonated water (CO2+H2O not soda water) to the mixture?

I've tried and tested this and it works for me. Include it with a teaspoon of Sodium bicarbonate.

I usually add 2 tablespoons per 100g of self raising flour.
*2 tablespoons of carbonated water, not sodium bicarbonate PER 100g of flour. Don't add 2 TBS of sodium bicarbonate per 100g self raising flour otherwise you're going to have a inedible bun/cake :)
yelenots: Are you using a gas oven, electric oven or fan assisted oven? You may not have the temperature right. Too high and they won't rise before you have to take them out. Too low and they will burn and be uncooked.
Or a microwave oven? I've found that they can be lethal if you don't get the temperature perfect, especially when trying to bake in them.

Zeronema.......I have a gas oven - I'll have a look for a recipe with carbonated water - never heard of that!
I made rainbow cupcakes with the kids - used every bowl in the house! The food colouring made the mixture go mental!

yele, try using a recipe for 'angel fan's which has a very light texture. Not sure how results will be for cupcakes, but give it a try. Just follow the part of the recipe for the cake, then decorate how you would normally. http://www.bbc.co.uk/food/recipes/angel_food_cake_with_04002
