Can anyone offer a tried and tested recipe for a starter using Ostrich meat please?

I can't, but I'd offer this advice, don't give everyone an entire thigh.

not as a starter anyway.
Do you not have other meat starters you have tried in the past where you can substitute the ostrich ? I'm not sure many will have experience of ostrich starters as such.
Untried/tested by me but I like the sound of the sauce:

Never tried Ostrich. But if it's anything like Emu, mince the meat and add herbs, chopped tomato, well anything that adds moisture, then either serve in a little pastry cup or on a small bed of salad.
Hope you enjoy whatever you create.
Come to think of it, instead of mincing, slow cook it before hand, shred the meat, then do as above.
Slow cook the head with plenty of seasoning, then place on a large bowl full of sand, and using a large spoon, bury it. :-)

I've made a salad with seared ostrich steak that is sliced and placed on a bed of leaves with a few blanched green beans and a sprinkling of pomegranate seeds and a pomegranate molasses dressing.

Beetroot works well too with some walnuts for a bit of bite.

Eccles, your answer sounds delish. I have only eaten a couple of times and seem to recall it tasted not unlke chicken. I think care is needed to prevent it drying out, a good marinade.

I've eaten ostrich in Africa but that was cooked for me and I've no idea how. I bought some steaks from the butcher who told me to grill them, but with guests coming I thought they might make something a little different as a starter and wondered if anyone had any good ideas. I saw a recipe on-line that includes a sauce made from monkey glands, but I definitely won't be following that one so any better ideas will be most welcome.

I don't know if my guests like ostrich - I'll find out. :o)

mince it then little burgers/ meatballs with salad ...treat as you would a beef burger or meat ball ... mix up a salad and put on top with a little grated cheese
Personally I wouldn't grill it as it is such a lean meat you are at risk of drying it out. Searing in a frying pan or on a griddle would be my preferred method of cooking.

There is another bird similar to an Ostrich called a Rea (pronounced Rear) I often find that a rear sausage is very enjoyable ;-)
I haven't tried it but I reckon a chunky salsa of ripe mango, avocado, tomato, chilli, spring onion finished with lime juice and coriander would suit ostrich too.

The monkey gland sauce looks undaunting.(ostrich steak starter).I thought it might involve a trip to London zoo and bung the keeper of the primates a monkey for a monkey. :-)
