I found a net of shallots in the garage that my dear one bought in the autumn, although they seem firm enough I wonder if they would still be good to pickle or will they just go soft and slimy due to their age, what do you guys think?

If they are still firm they should be fine. I am still using my shallots from last year. .. I had six sacks from my allotment. Just go through them and give them a squeeze and discard any soft ones.
