Horsemeat, what should i expect?

Hi there, first of all could i ask is it legal to import horsemeat into the uk? My friend is from a small french province and will be sending me a few kilos of her finest horsemeat which is from free range falabella foals which are a delicacy there.
What does horsemeat taste like and what would be the best way to serve this and with what?

If you want to breed a horse for meat, you do what every other meat breeder does and choose a type that is a good converter and makes a good saleable size with maximum usable flesh. If you are breeding a delicacy then you will know enough about it to know that you wont get a steak off a miniature type when it is a foal.
