High Protein & Low Carb diet for a Veggie?

Any ideasfor meals please?

Eggs, cheese and milk are allowed but no fish.

Please don't ask why..

Beans and tofu...

Curries, chillis, mixed bean salads with nuts and seeds. Marmite is also high protein. Omelettes...
Quorn products, tofu, pulses are all high protein.
You could try making little quiches like things but without the carb base, do them in little foil cakecases maybe so easier to set and eat out of? Incorporates eggs, cheese and milk and you can add lots of veggies like mushrooms, onions, courgettes, tomatoes etc...
If you want a good low carb diet plan for a veggie the rose Elliot one is very good... of course a veggie wouldn't be able to eat fish they are animals
Those little poaching pods you get for poached eggs can also be used for baking. Great for mini veggie omelettes.
So are those little silicon muffin trays.
High protein nut muffins

8 oz ground almonds
2 tablespoons #(heaped) crunchy peanut butter, teaspoon of baking powder, two eggs, three tablespoons cooking oil, 1/3 cup of granulated splenda type sweetener and a teaspoon of almond extract blend together put into muffin cases and bake 180 degrees for about 25 mins

Also good with some high cocoa solids chocolate grated into the mix or lemon zest and poppyseeds
