Truffles went wrong!

i made some truffles the other day with galaxy and baileys and they didnt set until i used twice the amount of chocolate needed, and they still didnt set properly - do you think using galaxy was a mistake? does anyone have a failproof recipie - preferably using just chocolate, cream and baileys, not keen on adding butter and sugar like some other recipies ive seen.

Using Galaxy for anything is a mistake. You need proper high proportion cocoa bean chocolate for truffles, not the apology for chocolate that is Galaxy.
To make truffles you need good quality dark chocolate, butter and cream. If you don't want to use the butter, make a ganache which is just the dark chocolate, melted, mixed with warmed double cream. Pour into a tin and leave to set in the fridge and use that for the truffles.
Galaxy isn't chocolate.
Baileys is a bad choice as well for a beginner far better to use clear spirits and liquers rather than cream ones

I have made truffles with galaxy but its really difficult but I've also done them with ordinary cadburys and other cheap choc they work best when you are adding a soaked solid like rum soaked raisins rather than blending the alcohol directly into the mix and its a completely different proportion to the proper choc ones
