Small amount of chilli
Cayenne pepper is powdered dried chilli peppers. You could substitute fresh chillis, Carribean hot pepper sauce, Tabasco, (which contains vinegar, though the vinegar would disappear in the cooking), or chilli oil. Paprika adds flavour and colour, but not heat.
My stalwart friend, oft referred to on here, chipotle pepper, a form of chilli with a hint of smokiness.
