Stuffed peppers

I'm going to make stuffed peppers as I love them, however as there's only me I'll need to freeze some. Is it better to freeze them cooked or uncooked; I would have thought better cooked as uncooked peppers could go really soft and fall apart when cooked. Anyone freeze them and can advise me? Another alternative would be to freeze the inside mixture and stuff pepper when needed...

if you half and blanche the peppers, and freeze unfilled, that works for me!

The easiest, and most fuel-efficient, way is to cook the whole lot as if for a meal and freeze what you don't use. Done this - works fine.
...can then be thawed/ heated in microwave and finished under a hot grill/

Yes - as long as you have left them with a bit of a bite after the first cooking! That's the way we like them - must do some this week!
