sandwich making business

I want to plan a sandwich making business within a premises.
Is there a criteria in which the business is positioned or planned if it is going to be placed within mini market?
What qualifications will be needed ?
Adding to the business i would also like to sell to other newsagents.
What type of insurance should i do ?
Options of insurance companies for this type of business ?
I want to also do my own company name to the purchases i will be selling but do not know how it works within this criteria (still need help & informatio)
