Just made some crab cakes for tea, adding what I fancied as I went along.
6oz crab meat, 10 cooked new potatoes, (mashed), two whisked eggs, 1 finely chopped onion, basil, lemon juice, a large dollop of mayo and 3-4 oz of breadcrumbs.
All mixed together and split into five large pattie type cakes. Cooked in the oven for about 35 minutes and served with honey roasted sweet potatoes and butternut squash..................to die for.
