i use rooster potatoes for mash, jacket and roast, they have lovely flavour, crisp well for roasties and are nice and fluffy for mash :-)

They're all the ones that I use for beautitful mash or crispy chips on the outside & fluffy on the inside.
I used some baking potatoes which I found fluffy too

I get Estima and Nadine baking potatoes from Asda and they are always lovely!

Rooster are lovely - you can get them in Galway, so N Ireland probably has them too.
