Definitely mint sauce, roast potatoes and some fresh green beans imo.
They're nice braised for hours in a gravy made with a little red wine, and served with garlic mash and fresh green vegetables.

Slow cooked? Roasting bag?
Mint sauce or redcurrant sauce, mash and peas.

Roasting bag is good, it retains the juices.
I do them in a big casserole dish. Brown them first on the hob - and then braise them on a low heat with onions and bouquet garni until the meat is practically dropping of the bone. Alongside the garlic mash and green vegetables, baby carrots go well with them too. One of my favourite meals.

On a bed of Mashed potatoes and a side of minted mushey peas and garlic or herb bread does it for me.

Also a glas of a good Granche would wask it all down nicely
Mashed potatos or moroccan cous cous goes really well. Depending on what type of lamb shank you have, I like honey roasted parsnips with it too.
