Risotto

I have made and just eaten a mushroom and green bean risotto.

It was lovely but what a pain in the posterior they are to make. All that ladelling in the stock and being there to watch it soaking up all the stock.
I have done oven baked ones in the past but with wholemeal rice and not arborrio. Would an oven baked one work with arborrio? has anyone done one of these?

No reason why not. I would likely take longer though. Incidentally, I only ladle in the first half of the stock then just dump the rest in and leave it on simmer. It is worth the effort in my humble opinion!

I agree that it's worth the effort ,Anngel. I love risotto. It's just that I would rather not have to sit in the kitchen for forty minutes watching a simmering saucepan if I could possibly aviod it.
Risotto rice from Uncle Ben's isn't bad, and it only takes a couple of minutes :-)

Why not try ORZO instead of rice ? It looks like rice and tastes even better, in my humble opinion. But it is much less prone to sticking to the pan !

Not easy to get but try bigger branches of Tesco. Don't forget to look in amongst the pasta, not the rice.

I've seen orzo,mikey but never tried it. Does it go soggy? I couldn't eat soggy pasta. Can it be done al dente? It's very small isnt it so I suppose you would have to keep an eye on it to prevent it overcooking. Thanks for your suggestion.
Orzo is the way to go ....... 10 minute cook and can be left alone to get on with it - through in some frozen peas, strain then toss in philadelphia for simple risotto-esque dish. No fuss!

The bbc goodfood one with bacon and peas is so easy, never goes wrong and you can add whatever you like. Only just discovered risotto after all these year, love it so easy and fairly quick.
Risotto should only take 18-20 mins to make. Orzo is definitely quicker and makes a delish risotto-type dish.
Agree vodka. In spite of the myths about lengthy cooking time-I've always found risotto pretty quick to make.
