Masses Of Mint

In my rented home's garden, I have a mint plant that has taken over the border underneath the kitchen window.

What is the best way to keep it after it's cut? Chop and freeze or make it straight into mint sauce? TIA.

I freeze mint and other herbs by chopping them, putting them in an ice cube tray, then covering them with water. Works perfectly.
chop and freeze into icecube trays pop cubes out into a bag to use when needed also hang up bunches in warm dry place to dry then crunch up for making peppermint tea

Can you freeze it dry do you think?
Better fresh, I'd say. So you have all the juices.
