Samphire, Lamb Fillet and Dauphinoise ....

............... does it go? And how would you cook the Samphire?

Yes it goes and yes to steaming the samphire.

What sauce are you going to have though? I feel you might need something on the right side of sweet to counter the salty samphire and the rich spuds,

Lovely - thanks Boxtops. Would you also serve carrots with it? I somehow feel lamb without carrots is wrong, but they seem a bit ordinary and boring with the other components .... what do you think?
<drools over steamed samphire, with unsalted butter>

Try steaming some carrot batons; to serve, toast some flaked cinnamon stick gently in a frying pan, add a knob of butter to melt and turn the carrots through it on a low heat for a couple of minutes.

For those of you who replied - it was delicious .... and we had a started of mushrooms in cream, garlic and brandy and a trio of lemon desserts (lemon posset, lemon ice cream and tarte au citron x

yes goes very well ,just Dont add too much salt when seasoning your lamb as thSamphire is very salty , just pop it into boiling water for about 1---2 mins then drain and srve with new pots ---lovely
