Wedding cake

Cake has been made for a while, I've been 'feeding' it with sherry. I've done the marzipan but how long should I leave it before I put the icing on. Is the marzipan meant to dry out for a while?

Give it at least a week before icing. I can't remember how long I left my mum's wedding cake for (2nd wedding!) but I reckon on about a week. Just a thought there's a shop in Edinburgh called The Finishing Touch on St Patrick Square, try and find their number and give them a call and ask, they're bound to know - a fab shop for cake decorators!

Thank you - I've marzipaned all 3 layers so just drying, icing, decorating to do, good job it's not needed till the 14th!
