Chef's knives

It's the daughter's birthday next month and she would like some decent knives, along with a block.
Anyone have any recommendations please....................

Take her to the local cooks shop and let her handle the knives. The most important thing is how the knife feels in the users hand.

Victorinox, Wusthof, Henkel are all good and have different ranges to meet most pockets. A steel should also be purchased.
Global knives are wonderful - but a 'set' would be horribly expensive - plus you need to be careful about how you sharpen them.

Hmmm - lost the second half of my post ...

My Sabatiers get used every day - as RH says a good et will last forever and they are easy to keep sharp with a stone or steel.

As eccles says, go and look & try - not all Sabatiers are created equal in quality/price/balance.

Having said that, these look nice ...

Thanks guys will now peruse............it's her that wants the block helen.
I back helen on this and still have mine as well......like my Le Creuset, over twenty five years old.

So are the ones in dave's link the same as the one helen recommended?
Despite having a few pieces of V Sabatier in my armory I personally I don't recommend Sabatier. There are many variations of Sabatier and I always worry that when someone gets into the shop they see the word 'Sabatier' and lose focus on any other aspect.

Sabatier is a generic description rather than a 'brand' or trademark.

Richardsons of Sheffield now own the "Sabatier V" brand, whether that is still the same quality as when RH bought hers I just don't know.

Amazon sell Sabatier V sets - but the customer reviews are a bit mixed ...

Hmm I see what you mean dave..............the reviews on your first link were much better.
And having looked a the link I can confirm that the Stellar Sabatier are not the same as V Sabatier.......and the ensuing debate is the very reason I don't recommend Sabatier....
I have some sabatier knives that ive had for years and love them. They feel good in your hand and arent too heavy. I bought a big cooks knife the other day and thats really good, cant remember the name on it schulz uter or ufer or something....

I've just looked at the Global knives, and nearly fainted at the price.
Himself recently bought some sort of Sabatier knives and they are almost too sharp for me to use (I am so used tot he rubbish, blunt things I was using - I have managed quite a few small cuts recently).

The reviews on dave's link warns about cutting yourself sherrard.....
it hurts a lot more with a blunt knife sherr....
I have just one Global - bought as a treat at the Good Food Show - I can't see the point in a full set, but my medium sized "cook's knife" is probably the most used knife in my kitchen.
may I respectfully suggest, sherrard, someone teaches you how to use knives properly; it is amazing how many people do not know how to wield knives safely in the kitchen.....then, if accidents happen, it is usually blunt knives that do it as they "bounce".
