Hot or cold . .

Just made a big pan of soup using my own home-made chicken stock and frozen it in portions. If the weather gets warm again I'll serve it chilled with sour cream and chives and call it vichysoisse. If it stays cold, it'll be hot leek and potato soup. Nothing like variety!

Oh and whichever, with my homemade crusty sourdough bread.

It's got to be really cold and very well seasoned but it's worth a try!

Cold soup is quite popular in Spain. I believe that it's called Gazpacho.

Why is it that you never see it on menus these days. It is one of those dishes that seems to have disappeared from menus and, when made properly, is delicious.

Yes, gazpacho is another famous cold soup - made with tomatoes, loads of garlic, olive oil and stale bread (amongst other things . . .). Honestly, if you've never tried a soup that is meant to be served cold, you're missing something. Th Spanish make another famous cold soup with almonds - I think it's called the Spanish equivalent of "white soup". Hot soup for cold weather, chilled soup for hot weather - makes sense to me.
I agree, vallaw, and I will add cold cucumber soup to the mix as well.
