Parched Peas

I paid a visit to Preston, lancs at the weekend and saw a few street stalls selling parched peas. I was going to get some, but I only like mushy peas so didn't bother.

Can anyone tell me what they are?

I think they are dried peas that need soaking, i think they are similar to mushy peas but I'm not 100% sure.
Wiil it work with ordinary peas?

On reading your links, I'm glad I didn't try them. I hate vinegar! Thanks once again.
