Do you make your own sausages?
If so, do you stick to a recipe? What casings do you use? Have you tried the artificial casings on a spool?
PS: Posted this in F & D but only got one reply, so thought I'd try here.

No , I don't make my sausages either mrs.chappie , though that snigger machine where you put the skin over the nozzle and fill it looks lots of fun !

Well it is BM, but it can be very fiddly if the skin's not right. It sometimes splits and can be messy! Quite theraputic though.

Ugh! I don't even like touching sausages, let alone making any. They're all cold and floppy, and their skins put me off!!!

Hey girls, I was just wondering if anyone had tried the artificial skins, 'cos they've shot right up in price, and I didn't want to waste the cash if they turned out to be chewy and tough.

The real skins (not the artificial ones) are animals' intestines, and they are revolting. Necessary though, to hold the sausage together.

confession....i used to squeeze the filling out of raw sausages and eat as a child.....lol.....i still like sausages now...but really well cooked...

IceMaiden....my mum always used to tell me i'd get worms...and no doubt dosed me with something or other to prevent it....yeuck yeuck...things we do as kids.... :-)

You were probably just lucky SC, but I don't think it means that if you eat under-cooked pork you're necessarily going to get worms. My youngest son started squeezing sausage meat out of its skin, and said it tasted better than being cooked, but after showing him some pics of long and gross worms, it stopped him doing it!
