I is for Ibex, N is for nuntjac, Q is for quagga.V is for velvet rat, X, as below, x-ray fish or if we are allowed single celled animals Xanthomonas axonopodis, Y is for yellow-bellied sea snake.

Actually, it's not a NUNTJAc, but MUNTJAc deer, a now common introduced Asian species of deer (that are FAST decreasing native bluebell populations here in Britain), failing that, N for Newt?!? V for Vervet Monkey, I for Iguana...as for the rest, pretty much stated! ;o)

There is a beautiful rain-forest bird called a Scarlet Ibis. If there is a non-scarlet Ibis, then this should count too!
Oh, and "X-ray fish".
